Fruit cake: it's full of so much love and warmth



A fragrant dough and a rich flavour: this is my favourite easy fruit cake, perfect for the afternoon tea or breakfast.


When you are baking this cake your house will smell of Christmas holidays and you will have a magic, warm and friendly vibe.

It's fantastic, I love to create an atmosphere like this.






Ingredients:
380 gr. dried fruit (raisins, apricots, cherries, peaches)
150 ml. water
110 gr. unsalted butter
110 gr. dark muscovado sugar
2 large eggs
1 tsp mixed spice
225 gr. self-raising flour, sifted








Directions
Preheat the oven to 150°. Grease and line a cake tin.
Put the dried fruit, water, butter and sugar into a saucepan and heat for about 20 minutes, stir gently.
After 20 minutes, let the mixture cool and then you can add the eggs and spice and flour. Mix it well with a wooden spoon.
Put the mixture into the tin and smooth the top.
Bake for about one hour and an half.
